Friday Favorites

Hey Everyone! Hope ya'll had a great week, and are ready for the weekend! I know I definitely am.

I'm sure everyone has had a crazy week. I talked earlier this week how things were going for us here in Tennessee, but its starting to get worse. We definitely do not have it anything like other cities we are seeing on the news. We are just continuing to pray for everything. Eric and I both are still working everyday. Unfortunately, his company announced they are going to cease their Saturday morning hours. Sadly, he will now be losing his over time. 

I have the pleasure of working in downtown Knoxville, and it seems like each day as I walk to and from my car, another store front has either closed their doors or altered their hours. Most restaurants are now take out only, it is starting to look like an eerie ghost town. Stores are still very sparse on inventory. You just have to take your chance, and you may hit it at the right time. Meat is pretty much the hardest thing to find at this point.

I'm sorry, but I do not have much for you today for favorites. I do want to share with you one of our favorite quick meals. 

Chicken Stir Fry 


Shopping List

3 Chicken Breast (I prefer Perdue)
or
1lb Flank Steak or Top Round Beef

2 Bags Frozen Vegetables (I use broccoli, cauliflower, and carrot mix in steamer bags)
2 tsp Cornstarch
1 1/2 tsp Salt
1 tsp Sugar
4 tbsp Soy Sause
4 tbsp Water
EVOO 

In a wok add diced meat and EVOO. Cook over medium heat until cooked all the way through. While meat is cooking, steam bags in microwave one bag at a time. Mix cornstarch, salt, sugar, soy sauce, and water in a bowl. Set aside. Once meat is cooked and vegetables have been steamed, remove meat from wok, set aside. Put vegetables in wok and cook over medium until they become crispy. Add chicken and remaining ingredients to wok. Cook until heated through. Serve immediately. 

Our family loves this as quick meal on nights we have sports. I try to keep bags of vegetables in the freezer, so as long as I have chicken and beef on hand its easy to throw together. All of the other ingratiates are staple pantry items.
